I love apple rose tarts, so I created this recipe with Pink Lady® apples to highlight their color. I made the tart crust gluten free.

Ingredients For pink lady® rose tarts

  • FOR THE PASTRY:
  • 1 c
    oatmeal flour
  • 1 c
    quinoa flour
  • 1 Tbsp
    potato starch
  • 1 tsp
    sugar
  • 6 Tbsp
    butter
  • 3-4 Tbsp
    cold water
  • FOR THE FILLING:
  • 3
    pink lady® apples
  • 2 Tbsp
    butter
  • 3 Tbsp
    lime juice
  • 1 tsp
    cinnamon
  • 1/8 tsp
    freshly grated nutmeg
  • 1 Tbsp
    sugar
  • FOR THE GLAZE:
  • apple cores & scraps
  • 2 Tbsp
    honey
  • 1 Tbsp
    lime juice
  • 1/4 c
    water

How To Make pink lady® rose tarts

  • Pink Lady® apples in dish

    Combine dry ingredients for pastry. Cut in butter. Add enough water to make dough come together. Form into ball and let rest while making filling.
  • Gluten-free pastry ball in blue bowl.

    Thinly slice apples. (save cores & scraps to make glaze)
  • Softened thin apple slices and spices in clear bowl with spatula.

    Melt & combine remaining filling ingredients. Gently stir in apple slices. Heat in microwave for 30 seconds or until pliable.
  • Pastry being formed in greased muffin tin alongside pastry cutter.

    Butter muffin tin. Roll out pastry and cut to fit individual muffin shape.
  • Thin apple slices lined up on white cutting board.

    Line up about 10 apple slices and roll up into a rose shape.
  • Thin apple slices formed into rose shape & placed in gluten-free pastry cases in muffin tin.

    Place in tart shell & fill in any gaps with extra slices.
  • Pink Lady® apple rose tarts in muffin tin ready for baking.

    Bake at 375° for 30-35 minutes, or until crust begins to brown.

    Combine glaze ingredients into small saucepan. Cook over low heat until juice has thickened. Remove apple scraps.
  • Baked Pink Lady® apple rose tart on vintage Franciscan Desert Rose® saucer.

    Brush thickened glaze over hot tarts as they come out of the oven. Allow to cool before removing from pan.
