pineapple whip, sandy's
While looking through my mother in law's recipes for a dip that she wants me to make, I found this. She got so excited, saying it tastes just like one of her favorite treats at Disney World! She was like a kid in a candy store, so this just might be better than a birthday cake for her!

Ingredients
- 1 - pineapple, peeled, cored, cut into chunks and frozen (6 1/2-7 cups)
- 1/2 cup coconut milk, more as needed
- 1-3 tablespoon honey, maple syrup, or agave (to taste)
How To Make pineapple whip, sandy's
-
Step 1Peel, core and cut 1 fresh pineapple into chunks. Spread chunks on lined cookie sheet and freeze until solid (at least 24 hours).
-
Step 2Place frozen pineapple in food processor along with 1/2 c coconut milk. Process until the mixture is smooth and creamy. Scrape down sides and add more milk as needed to get smooth consistency.
-
Step 3Taste and add sweetener to your liking. Process once more to incorporate sweetener. To achieve soft serve look pipe into bowls with a large open star tip.
-
Step 4Note: You could also buy precut frozen pineapple chunks instead of the fresh and save a few steps...
