1pineapple, peeled, cored, cut into chunks and frozen (6 1/2-7 cups)
1/2 ccoconut milk, more as needed
1-3 Tbsphoney, maple syrup, or agave (to taste)
How to Make Pineapple Whip, Sandy's
- Peel, core and cut 1 fresh pineapple into chunks. Spread chunks on lined cookie sheet and freeze until solid (at least 24 hours).
- Place frozen pineapple in food processor along with 1/2 c coconut milk. Process until the mixture is smooth and creamy. Scrape down sides and add more milk as needed to get smooth consistency.
- Taste and add sweetener to your liking. Process once more to incorporate sweetener. To achieve soft serve look pipe into bowls with a large open star tip.
- Note: You could also buy precut frozen pineapple chunks instead of the fresh and save a few steps...
