While looking through my mother in law's recipes for a dip that she wants me to make, I found this. She got so excited, saying it tastes just like one of her favorite treats at Disney World! She was like a kid in a candy store, so this just might be better than a birthday cake for her!

Ingredients For pineapple whip, sandy's

  • 1
    pineapple, peeled, cored, cut into chunks and frozen (6 1/2-7 cups)
  • 1/2 c
    coconut milk, more as needed
  • 1-3 Tbsp
    honey, maple syrup, or agave (to taste)

How To Make pineapple whip, sandy's

    Peel, core and cut 1 fresh pineapple into chunks. Spread chunks on lined cookie sheet and freeze until solid (at least 24 hours).

    Place frozen pineapple in food processor along with 1/2 c coconut milk. Process until the mixture is smooth and creamy. Scrape down sides and add more milk as needed to get smooth consistency.

    Taste and add sweetener to your liking. Process once more to incorporate sweetener. To achieve soft serve look pipe into bowls with a large open star tip.

    Note: You could also buy precut frozen pineapple chunks instead of the fresh and save a few steps...
