1/2 c
firmly packed brown sugar
1/4 c
cane sugar
3 Tbsp
1 large
can crushed pineapple


2 c
all purpose flour
3 tsp
baking powder
1 tsp
1/2 c
cane sugar
1/2 c
vegetable shortening
2 large
1 c
1 tsp
real vanilla extract

How to Make Pineapple Cobbler


  • 1Preheat oven to 350 degrees.
    Grease and flour shallow casserole dish.
  • 2Cook until it comes to a boil, sugars, cornstarch and pineapple.
  • 3Mix flour, baking powder, salt and sugar.
    Add shortening; mix until texture is like cornmeal.
    Add eggs, milk and vanilla.
  • 4Pour Pineapple filling into greased and floured shallow casserole dish.
    ( I top with 3/4 cup of coconut.)
    Top with cobbler that has been patted out to just fit inside shallow casserole dish.
    (HINT: I make an milk wash and lightly brush top of cobbler and sprinkle granulated suger ( or cinnamon sugar)lightly over cobbler. Do this 10 minutes before end of cooking time as sugar can burn.)
  • 5Bake at 350 degrees for 25 to 30 minutes.
    Good served warm with a scoop of vanilla ice cream.
