Ingredients
- PINEAPPLE FILLING:
- 1/2 cup firmly packed brown sugar
- 1/4 cup cane sugar
- 3 tablespoons cornstarch
- 1 large can crushed pineapple
- COBBLER:
- 2 cups all purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup cane sugar
- 1/2 cup vegetable shortening
- 2 large eggs
- 1 cup milk
- 1 teaspoon real vanilla extract
How To Make pineapple cobbler

Step 1Preheat oven to 350 degrees. Grease and flour shallow casserole dish.

Step 2Cook until it comes to a boil, sugars, cornstarch and pineapple. COOL!!!!!!

Step 3Mix flour, baking powder, salt and sugar. Add shortening; mix until texture is like cornmeal. Add eggs, milk and vanilla.

Step 4Pour Pineapple filling into greased and floured shallow casserole dish. ( I top with 3/4 cup of coconut.) Top with cobbler that has been patted out to just fit inside shallow casserole dish. (HINT: I make an milk wash and lightly brush top of cobbler and sprinkle granulated suger ( or cinnamon sugar)lightly over cobbler. Do this 10 minutes before end of cooking time as sugar can burn.)

Step 5Bake at 350 degrees for 25 to 30 minutes. Good served warm with a scoop of vanilla ice cream.
