1Preheat oven to 350 degrees.
Grease and flour shallow casserole dish.
2Cook until it comes to a boil, sugars, cornstarch and pineapple.
3Mix flour, baking powder, salt and sugar.
Add shortening; mix until texture is like cornmeal.
Add eggs, milk and vanilla.
4Pour Pineapple filling into greased and floured shallow casserole dish.
( I top with 3/4 cup of coconut.)
Top with cobbler that has been patted out to just fit inside shallow casserole dish.
(HINT: I make an milk wash and lightly brush top of cobbler and sprinkle granulated suger ( or cinnamon sugar)lightly over cobbler. Do this 10 minutes before end of cooking time as sugar can burn.)
5Bake at 350 degrees for 25 to 30 minutes.
Good served warm with a scoop of vanilla ice cream.
