A favorite recipe of mine, I hope you enjoy....

Ingredients

  • PINEAPPLE FILLING:
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup cane sugar
  • 3 tablespoons cornstarch
  • 1 large can crushed pineapple
  • COBBLER:
  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup cane sugar
  • 1/2 cup vegetable shortening
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon real vanilla extract

How To Make pineapple cobbler

  • Step 1
    Preheat oven to 350 degrees. Grease and flour shallow casserole dish.
  • Step 2
    Cook until it comes to a boil, sugars, cornstarch and pineapple. COOL!!!!!!
  • Step 3
    Mix flour, baking powder, salt and sugar. Add shortening; mix until texture is like cornmeal. Add eggs, milk and vanilla.
  • Step 4
    Pour Pineapple filling into greased and floured shallow casserole dish. ( I top with 3/4 cup of coconut.) Top with cobbler that has been patted out to just fit inside shallow casserole dish. (HINT: I make an milk wash and lightly brush top of cobbler and sprinkle granulated suger ( or cinnamon sugar)lightly over cobbler. Do this 10 minutes before end of cooking time as sugar can burn.)
  • Step 5
    Bake at 350 degrees for 25 to 30 minutes. Good served warm with a scoop of vanilla ice cream.
