Peaches and cream blintz/ crepes

1 call purpose flour

2eggs

1/2 cmilk

1/2 cwater

1/4 tspsalt

2 Tbspbutter, melted

·cream cheese frosting

·canned or fresh peaches
How to Make Peaches and cream blintz/ crepes
- in a large mixing bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter beat until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle/pan, using approx. 1/4 cup for each crepe( a little more for blintz). Tilt the pan with a circular motion so that the batter coats the surfae evenly.
- Cook the crepe for about 2 minutes, until the bottom is lightly brown. Loosen with a spatula, turn and cook the other side.
- Once crepe is cooked immediately place on a large plate and fill with frosting and peach slices. Fold burrito style and serve. May garnish with powdered sugar.
