This is a refreshing and delicious summer dessert! It is an all time favorite at pot-lucks. I very seldom bring a bite home!

Ingredients
- CRUST:
- 1 1/2 cups all purpose flour
- 3/4 cup butter, melted
- 3/4 cup pecans, chopped
- MIDDLE LAYER:
- 8 ounces cream cheese, room temperature
- 1 small cool whip
- 2 cups powdered sugar
- FRUIT TOPPING:
- 1 1/2 cups water
- 1 1/2 cups sugar
- 4 1/2 tablespoons clear jell (dry powder)
- 1/4 teaspoon salt
- 1 tablespoon corn syrup, light
- 1 tablespoon lemon juice
- 5 tablespoons dry jello, apricot or peach
- 8-10 - ripe peaches
How To Make peach delight

Step 1CRUST: Mix together all ingredients and pat into 9x13 baking pan. Bake at 375 for 15 minutes. Cool thoroughly

Step 2MIDDLE LAYER: Cream together all ingredients until smooth. Spread on cooled pecan crust.

Step 3FRUIT TOPPING:Cook water, sugar, salt, clear jell, syrup, and lemon juice until thick and clear. Remove from heat. Add Jell-O. Cool. Add sugared,peeled, & cubed peaches to room temperature filling.Pour over cream cheese filling.
