peach cobbler a la cousin amanda
The first recipe is from my cousin’s granddaughter, Amanda. She loved cooking and was a good home cook, and then she went to culinary school. This was one of her early recipes. You can use any stone fruit or most canned fruits in exchange for the peaches.

Ingredients
- BATTER
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1 cup milk
- 1 tablespoon vanilla extract
- PEACHES
- 29 ounces canned peaches, reserve syrup or 12 - 14 fresh peaches, peeled and sliced
- 1/2 cup granualted sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg, optional

Step 1Preheat oven to 350 degrees F. Generously butter a 9×13-inch pan/dish.

Step 2Batter: Stir together dry ingredients. Stir wet ingredients together. Then add to the dry ingredients. If this is a bit too thick, then add a very small amount of milk. Pour this into the prepared pan. Arrange peaches over the batter.

Step 3Peaches: To the reserved peach syrup, add sugar, cinnamon, and nutmeg. Pour this over the peaches. If you use fresh peaches, mash one up and make a syrup by boiling 1/2 cup sugar, 1/2 cup water, a dash of cinnamon, and a dash of vanilla, then proceed.

Step 4Bake at 350 degrees for 45 minutes or until golden brown on top. Great served with ice cream on top.

Step 5Note: This is my cousin’s grandchild’s recipe, and she is a fantastic cook, like most of our family. I am sure Amanda would be the first to say each Cook/Chef always adds their own signature to it. I, too, would omit the nutmeg, and if it were JUST me, I would add a 1/2 teaspoon of cloves, but my daughter does not like it. I am thinking if you are like me and keep peaches on hand that are frozen, you could do the same with frozen peaches as you do with fresh.
