out of this world summer fruit cobbler

I love summer with it's bounty of fresh fruits and vegetables! This is a quick and easy dessert that incorporates those wonderful fruits of the season. My Uncle David used to own a diner in town and he would never let you leave without dessert - usually a fruit cobbler. His apple cobbler was to die for and I don't even like cooked apples! It is so simple that it might fool you...but I think it is the best cobbler, as close to Uncle David's as I could get.

Ingredients

  • 1 stick butter
  • 1 cup sugar
  • 1 cup flour
  • 3/4 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3-4 cups fresh fruit
  • 3/4 cup sugar
  • - large crystalized sugar-if desired for top

How To Make out of this world summer fruit cobbler

  • Step 1
    Preheat oven to 325 degrees. Slice fruit, if needed; add 3/4c sugar over the top; let stand until the sugar turn into a syrup; stir before putting into baking dish.
  • Step 2
    Place the butter into a 1 1/2qt baking dish; put into preheated oven to melt the butter. Remove dish from oven as soon as the butter is melted.
  • Step 3
    In a large bowl combine milk and sugar. Stir until sugar is dissolved. Sift flour, baking powder and salt together. Add the flour mixture to the milk mixture. Pour batter over melted butter in baking dish. Drop, by spoonfuls, fruit mixture evenly over batter. You may also sprinkle top with large crystalized sugar
  • Step 4
    Bake at 325 degrees 30-40 minutes or until lightly brown. Top with vanilla ice cream if desired.
