A lite and fluffy orange dessert that has been enjoyed for many years. My ex mother in law gave me this recipe in the 1970's.

Ingredients
- 1 can crushed pineapple in own juices
- 1/4 cup sugar
- 1 box large box of orange jello
- 1 pound small curd cottage cheese
- 2 cans drained mandarin oranges
- 3 cups mini marshmellows
- 1 - medium tub of cool whip
How To Make opal salad

Step 1Bring pineapple with juice and sugar to a boil.

Step 2Remove from heat and add jello, stir until desovled, then add cool whip and cottage cheese and 1 can of mandarin oranges (drained).

Step 3chill for 30 minutes in frig, remove and add marshmellows. Stir in and add remaining can of drained oranges on top in a clever pattern.
