neato keto layered fruit crumble
Made with fresh or frozen berries, a luscious cream cheese layer, and topped with a buttery Keto crumble. You'll never know this is good for you, and everyone will enjoy it. You can use strawberries, mixed berries, and, if you don't want a Keto version, use peaches (because peaches contain way too much sugar to be low carb).

How To Make neato keto layered fruit crumble
-
Step 1Preheat the oven to 350 degrees F and spray a 9x13" glass baking dish with nonstick spray (I use grapeseed oil spray).
-
Step 2If berries are frozen, allow them to sit at room temperature until thawed. In a large mixing bowl, toss the berries (I use sliced frozen or fresh strawberries) with the sweetener. Set aside.
-
Step 3In another large bowl, beat the softened cream cheese until smooth with a mixer. Add sweetener, eggs, and vanilla extract. Mix until combined well.
-
Step 4In a separate bowl, whisk together almond flour, coconut flour, sweetener, and baking powder. Stir in melted butter and vanilla extract until a crumbly dough forms.
-
Step 5To assemble, spread the sweetened strawberries evenly on the bottom of the prepared baking dish.
-
Step 6Pour the cream cheese mixture over the strawberries and gently spread out. Crumble the dough on top.
-
Step 7Bake for 25–30 minutes, or until the topping is golden brown and the filling is bubbly. Cool slightly before serving.
