Made with fresh or frozen berries, a luscious cream cheese layer, and topped with a buttery Keto crumble. You'll never know this is good for you, and everyone will enjoy it. You can use strawberries, mixed berries, and, if you don't want a Keto version, use peaches (because peaches contain way too much sugar to be low carb).

Ingredients

  • STRAWBERRY LAYER
  • 4 cups fresh or frozen berries
  • 1/4 cup sugar-free granulated sweetener
  • CREAM CHEESE LAYER
  • 16 ounces cream cheese, softened
  • 3 tablespoons sugar-free granulated sweetener
  • 2 large eggs
  • 1 1/2 teaspoons pure vanilla extract
  • CRUMBLE LAYER
  • 1 1/4 cups almond flour
  • 1/3 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon pure vanilla extract
  • 1/3 cup butter, melted
  • 1/4 cup sugar-free granulated sweetener

How To Make neato keto layered fruit crumble

  • Step 1
    Preheat the oven to 350 degrees F and spray a 9x13" glass baking dish with nonstick spray (I use grapeseed oil spray).
  • Step 2
    If berries are frozen, allow them to sit at room temperature until thawed. In a large mixing bowl, toss the berries (I use sliced frozen or fresh strawberries) with the sweetener. Set aside.
  • Step 3
    In another large bowl, beat the softened cream cheese until smooth with a mixer. Add sweetener, eggs, and vanilla extract. Mix until combined well.
  • Step 4
    In a separate bowl, whisk together almond flour, coconut flour, sweetener, and baking powder. Stir in melted butter and vanilla extract until a crumbly dough forms.
  • Step 5
    To assemble, spread the sweetened strawberries evenly on the bottom of the prepared baking dish.
  • Step 6
    Pour the cream cheese mixture over the strawberries and gently spread out. Crumble the dough on top.
  • Step 7
    Bake for 25–30 minutes, or until the topping is golden brown and the filling is bubbly. Cool slightly before serving.
