My Fresh Strawberry & Banana Muffins

With fresh strawberries in season I thought I'd add some to my banana muffins. They turned out so moist. Shared them with my neighbor and made a hit again. So easy and simple to make. Depending on what size muffins pans you have will determin how many you will get from this recipe. Enjoy!

Ingredients

  • 1 c
    butter, softened
  • 1 1/2 c
    sugar
  • 2
    eggs
  • 4 c
    all purpose flour
  • 4 tsp
    baking powder
  • 1 tsp
    salt
  • 1 tsp
    vanilla extract
  • 1 c
    milk
  • 2
    ripe banana, mashed
  • 3 c
    fresh strawberries, chopped
  • 6 tsp
    sugar
  • 1 tsp
    cinnamon

How to Make My Fresh Strawberry & Banana Muffins

Step-by-Step

  1. Pre-heat your oven to 400 degrees.
  2. In a large mixing bowl; cream butter and sugar together and add eggs and mix well.
  3. Sift flour, baking powder and salt in a small bowl.
  4. Add flour mixture and milk alternately to butter mixture.
  5. Add vanilla and mix well.
  6. Add mashed banana's.
  7. Gently stir in strawberries.
  8. Place batter into prepaired muffin pans sprayed with non-stick oil using a ice cream scoop.
  9. Mix sugar and cinnamon and sprinkle over muffins.
  10. Place in oven and bake at 400 degrees for 20 to 25 minutes.
  11. Remove from oven and let cook on racks.
  12. When cool place muffins in a container that will hold them all and keep in the refregerator until ready to eat. This will keep the strawberries fresh longer.Enjoy!
