my fresh strawberry & banana muffins

With fresh strawberries in season I thought I'd add some to my banana muffins. They turned out so moist. Shared them with my neighbor and made a hit again. So easy and simple to make. Depending on what size muffins pans you have will determin how many you will get from this recipe. Enjoy!

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 2 - eggs
  • 4 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 - ripe banana, mashed
  • 3 cups fresh strawberries, chopped
  • 6 teaspoons sugar
  • 1 teaspoon cinnamon

How To Make my fresh strawberry & banana muffins

  • Step 1
    Pre-heat your oven to 400 degrees.
  • Step 2
    In a large mixing bowl; cream butter and sugar together and add eggs and mix well.
  • Step 3
    Sift flour, baking powder and salt in a small bowl.
  • Step 4
    Add flour mixture and milk alternately to butter mixture.
  • Step 5
    Add vanilla and mix well.
  • Step 6
    Add mashed banana's.
  • Step 7
    Gently stir in strawberries.
  • Step 8
    Place batter into prepaired muffin pans sprayed with non-stick oil using a ice cream scoop.
  • Step 9
    Mix sugar and cinnamon and sprinkle over muffins.
  • Step 10
    Place in oven and bake at 400 degrees for 20 to 25 minutes.
  • Step 11
    Remove from oven and let cook on racks.
  • Step 12
    When cool place muffins in a container that will hold them all and keep in the refregerator until ready to eat. This will keep the strawberries fresh longer.Enjoy!
