My Fresh Strawberry & Banana Muffins

With fresh strawberries in season I thought I'd add some to my banana muffins. They turned out so moist. Shared them with my neighbor and made a hit again. So easy and simple to make. Depending on what size muffins pans you have will determin how many you will get from this recipe. Enjoy!

Ingredients

1 c
butter, softened
1 1/2 c
sugar
2
eggs
4 c
all purpose flour
4 tsp
baking powder
1 tsp
salt
1 tsp
vanilla extract
1 c
milk
2
ripe banana, mashed
3 c
fresh strawberries, chopped
6 tsp
sugar
1 tsp
cinnamon

How to Make My Fresh Strawberry & Banana Muffins

Step-by-Step

  • 1Pre-heat your oven to 400 degrees.
  • 2In a large mixing bowl; cream butter and sugar together and add eggs and mix well.
  • 3Sift flour, baking powder and salt in a small bowl.
  • 4Add flour mixture and milk alternately to butter mixture.
  • 5Add vanilla and mix well.
  • 6Add mashed banana's.
  • 7Gently stir in strawberries.
  • 8Place batter into prepaired muffin pans sprayed with non-stick oil using a ice cream scoop.
  • 9Mix sugar and cinnamon and sprinkle over muffins.
  • 10Place in oven and bake at 400 degrees for 20 to 25 minutes.
  • 11Remove from oven and let cook on racks.
  • 12When cool place muffins in a container that will hold them all and keep in the refregerator until ready to eat. This will keep the strawberries fresh longer.Enjoy!
