Ingredients

  • 1/3 cup ice water
  • - 3 tbsp sour cream
  • - 1 cup plus 2 tbsp. flour
  • - ¼ cup cornmeal
  • - 1½ tbsp sugar
  • - ½ tsp salt
  • - 8 tbsp butter, chilled and cut into small pieces
  • - 1½ cups mixed berries, (no strawberries
  • - 2 tbsp sugar
  • - 1 tbsp honey
  • - egg wash, 1 lightly beaten egg and 2 tbsp. milk
  • - coarse sugar, to taste

How To Make mixed berry galette

  • Step 1
    This recipe requires 2 hours of refrigeration. Preheat oven to 350. Mix the ice water and sour cream in a bowl. Put the flour, cornmeal, 1 1/2 Tbsp. sugar and the salt in a food processor and pulse to mix. Add 7 Tbsp. of the butter, pulsing constantly until mixture resembles peas. Add the sour cream mixture and pulse just until mixed; scrape side of the bowl. Wrap dough in plastic wrap and chill for 2 hours or longer; the dough will look wet.. Toss the berries with 2 Tbsp. sugar, remaining 1 Tbsp. butter and the honey in a bowl. Roll chilled dough into a 1/4 inch thick round on lightly floured piece of baking parchment. Place the baking parchment and dough round on a baking sheet. Spoon the berry filling in the center of the round. Fold dough about 1 inch over the filling. Brush with egg wash and sprinkle with coarse sugar. Bake for 25 to 35 minutes or until golden brown. Serves 4
