Ingredients
- 3 tablespoons cream sherry
- 2 tablespoons golden raisins
- 4 large baking apples (such as mcintosh, granny smith, or rome beauties)
- lemon juice
- 3/4 cup water
- 5 tablespoons sugar
- 2 ounces almonds, ground
- 1/4 teaspoon grated lemon zest
- 1/4 teaspoon cinnamon
- 1/8 teaspoon grated nutmeg
- 3 tablespoons butter, melted and cooled
How To Make manzanas asadas rellenas de almendra

Step 1In a small saucepan, combine the sherry and raisins. Bring to a boil, remove from heat, and set aside for 10 minutes.

Step 2Peel the apples and rub them with lemon juice. Core the apples from the top, leaving a 1/2 inch at the bottom of each apple. Try to leave as much apple as possible.

Step 3Strain sherry into a shallow baking dish. Stir in the water and 1 tablespoon sugar.

Step 4Preheat the oven to 350 F. In a small bowl, combine the raisins, almonds, remaining sugar, lemon zest, cinnamon, nutmeg, and butter. Fill apples with the almond mixture and arrange in baking dish.

Step 5Bake 30 minutes, basting apples occasionally.

Step 6Cover lightly with foil and bake 15 to 30 minutes more, or until apples are tender.

Step 7Let apples cool for about 5 minutes.

Step 8Spoon juices over apples and serve warm or at room temperature.
