Received this recipe from a friend in Tennessee some years back. Very good!

Ingredients

  • 3 large pears, peeled & thinly sliced
  • 1/4 cup fresh lemon juice
  • 1/4 cup sugar
  • 1 cup self-rising flour
  • 3/4 cup brown sugar, firmly packed
  • 1 teaspoon grated lemon rind
  • 1/2 cup butter or margarine
  • - whipped cream, unsweetened

How To Make lemon-pear pudding

  • Step 1
    Preheat oven to 400^. Combine first 3 ingredients; place in a lightly greased 8" square baking dish.
  • Step 2
    Combine flour, brown sugar and lemon rind; cut in butter with a pastry blender until mixture is crumbly, then sprinkle evenly over pear mixture.
  • Step 3
    Bake for 30-35 minutes. Serve warm with whipped cream.
