lemon berry triffle
I used to be a Promotions Clerk for the company I am still with. This recipe is an adaption of a food tasting that I did. It is kind of a combination of a triffle and a tiramisu (with citrus. This is my first recipe on here--hope you enjoy!!

Ingredients
- 1 pound mascarpone cheese
- 10 ounces lemon curd
- 2 teaspoons lemon zest, grated
- 24-32 - lady fingers (crunchy type)
- 6 packages assorted berries (6 oz size)
- 1 cup lemon juice
- 1 1/2 cups heavy whipping cream
- 1 1/2 teaspoons lemon extract
- 1/4 to 1/2 cup powdered sugar
- 8 ounces cream cheesse
How To Make lemon berry triffle

Step 1Curd layer) Cream mascarpone, cream cheese, lemon curd, and lemon zest till smooth. Works best with cold mascarpone and cream cheese room temp!

Step 2Cream layer) Mix heavy cream with powdered sugar and lemon extract and beat still soft peaks form.

Step 3Cookie Layer) Pour lemon juice into a shallow bowl. Dip each finger into lemon juice and lay neatly into dish (1 layer). (I use a 8 by 10 by 3 inch glass)

Step 4Berry layer) Rinse and mix berries.

Step 5Layer in dish in following order: Cookie, Curd, berries, Cream. Going through 2 layers. Sprinkle with lemon zest for garnish.

Step 6Best if refrigerated overnight!
