Ingredients
- FOR CRUST:
- 1 cup soft butter
- 1/2 cup confectioner's sugar
- 2 cups flour
- 1 dash salt
- FOR FILLING:
- 4 - eggs, beaten
- 1/2 cup flour
- 2 cups sugar
- 6 tablespoons fresh lemon juice
- - grated rind of 2 lemons
- - confectioner's sugar for topping, optional
How To Make lemon bars

Step 1Combine ingredients for crust, mix well. Press into greased 9 x 13 pan. Bake at 350 for 25 min until lightly browned. Combine flour & sugar for filling, add eggs, juice & rind. Pour onto slightly cooled crust. Bake at 350 about 30 min until set. Cool, sprinkle with confectioners sugar if desired & cut into bars.
