johnny's blueberry cobbler
My husband, Johnny, surprised me the other day with this wonderful blueberry cobbler. It was so good! We have some blueberry bushes and since we have an abundant crop of blueberries we froze many of them this summer. Here is his recipe. Enjoy.

Ingredients
- 1 stick butter
- 1 pint fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1/4 cup water
- 2 cups sugar
- 1 cup self-rising flour
- 1/2 cup milk
- 1/4 teaspoon vanilla
How To Make johnny's blueberry cobbler

Step 1Preheat oven 375 degrees. Melt butter (in oven) in a large deep dish baking pan. In a saucepan, combine blueberries, lemon juice, water and 1 cup sugar. Bring to a boil and remove from heat.

Step 2For the batter, combine remaining ingredients, mixing until smooth. Pour this over the melted butter in the baking pan. Top with blueberry mixture. Bake until top is golden brown and crusty for about 25-30 minutes.

Step 3If you do not have self-rising flour combine 1 tsp. baking powder and 1/2 tsp. salt to all purpose flour. Also, I told my husband that this was kind of sweet so when I make this I'm going to cut back on the sugar. It was still good but a little too sweet.
