I make this for dessert for potlucks, family get togethers or any occasion and there is never any leftovers. I use whatever fruit is available for the season.

Ingredients

  • 1 tube refrigerated sugar cookie dough
  • 1 can cream cheese frosting
  • 1 - canned mandarin oranges (drained)
  • 1 pint strawberries, fresh
  • 1 pint blueberries, fresh
  • 1 pint blackberries, fresh
  • 1/4 cup apricot preserves
  • 2 tablespoons water

How To Make fruit pizza

  • Step 1
    Preheat oven to 350 degrees. Wash the blueberries and blackberries and drain. Pat dry with a paper towel to remove excess water. Wash and slice the strawberries and pat dry.
  • Step 2
    Line a cookie sheet with aluminum foil and spray with non-stick cooking spray. Slice cookie dough and place on cookie sheet. Press on cookie dough and seal all seams to make one big cookie sheet. Bake in 350 degree oven for 15 minutes. Remove from oven and let cool completely.
  • Step 3
    Spread cream cheese frosting on completely cooled cookie. Top with fruit. In small bowl, combine apricot preserves and water. Brush on fruit for beautiful shine and added flavor.
  • Step 4
    Cut into pieces and serve. I have tried various fruits and it turns out wonderful every time.
