This recipe originates in an organizational recipe book that I received as a gift some years ago. Many of the recipes in that book have become kitchen staples. This one is especially good with outstanding fruit flavor.

Ingredients

  • 4 c
    diced fresh fruit (rhubarb, apples, cherries, blueberries. i have used frozen blueberries successfully.
  • 1 c
    flour, sifted
  • 3/4 c
    oatmeal
  • 1 c
    brown sugar, packed
  • 1/2 c
    butter, melted
  • 1 tsp
    cinnamon
  • 1 c
    sugar
  • 1 c
    water
  • 2 Tbsp
    cornstarch
  • 1 tsp
    vanilla

How to Make Fruit Crunch

Step-by-Step

  1. Mix flour, oatmeal, brown sugar, melted butter and cinnamon together until crumbly in texture. Press half of crumb mixture into a greased 9-inch square pan. Add diced fresh fruit.
  2. In a saucepan mix granulated sugar, water, cornstarch and vanilla. Cook syrup ingredients until thick and clear. Pour over fruit. Top with remaining crumbs.
  3. Bake at 350 degrees for 1 hour.
