This recipe has been in my recipe box since I was in my early 20's. Oh so long ago!

Ingredients

  • 1 cup sugar
  • 4 tablespoons all purpose flour
  • 1/2 - 1 teaspoons cinnamon
  • 2 cups canned fruit with 3/4 cup juice or
  • 3 cups fresh fruit
  • SHORTCAKE RECIPE
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1/4 cup shortening
  • 3/4 cup whole mile
  • 1 tablespoon butter, cold
  • 3/4 teaspoon cinnamon and sugar mixed together, for top

How To Make fruit cobbler

  • Step 1
    STEP 1 In a large bowl add either 2 cups of canned fruit, any kind and measure 3/4 cups of the juice from canned fruit OR you can use 3 cups fresh fruit, any kind such as cherries, peaches, berries etc. If using peaches,cut into slices.
  • Step 2
    To the fruit add sugar (1 cup of sugar if using fresh fruit or only 1/4 cup of sugar if using canned fruit). Add flour with cinnamon mixed into it. Put everything in a 2 quart casserole.
  • Step 3
    STEP 2 Time to make the SHORTCAKE! Start by sifting the flour, baking powder, salt and sugar together. Add 1 tablespoon of softened butter with 1/4 cup of shortening. Pour in 3/4 cup of whole milk. Knead gently for 1 minute or so until well blended. Pat or roll out dough into 1/2 inch thickness and fit over top of fruit. Prick with a fork for steam to escape. Brush top of dough with either an egg mixed with a little water or milk for browning. Optional: Lightly sprinkle top of dough with a cinnamon/sugar combination. Serve warm with ice cream or a whipped topping.
