Yeah for Spring! Just saw rhubarb in the store, so made the first crisp of the season! YUM! (from Great American recipes)

Ingredients

  • 3 c
    sliced fresh rhubarb
  • 1 tsp
    cinnamon
  • dash(es)
    salt
  • TOPPING

  • 3/4 c
    flour
  • 1 c
    sugar
  • 1/3 c
    butter
  • 1/3 c
    sliced almonds or chopped walnuts
  • ·
    whipped cream or vanilla ice cream, if desired

How to Make Fresh Rhubarb Crisp

Step-by-Step

  1. Preheat the oven to 350 degrees. If the rhubard is very thick, peel it first to remove some of the outer skin.
  2. Place sliced rhubarb in a 6x10 inch baking dish. Sprinkle witht the cinnnamon and salt.
  3. In a bowl, combine the flour and the sugar. Cut in the butter until crumbly. Add almonds or walnuts. Sprinkle the crumbly mixture over the rhubarb.
  4. Bake for about 35 minutes or until golden brown and rhubarb is soft and cooked. Let cool slightly.
  5. Serve with whipped cream or vanilla ice cream, if desired (and of course it is desired!)
