Yeah for Spring! Just saw rhubarb in the store, so made the first crisp of the season! YUM! (from Great American recipes)

Ingredients

  • 3 cups sliced fresh rhubarb
  • 1 teaspoon cinnamon
  • dash salt
  • TOPPING
  • 3/4 cup flour
  • 1 cup sugar
  • 1/3 cup butter
  • 1/3 cup sliced almonds or chopped walnuts
  • - whipped cream or vanilla ice cream, if desired

How To Make fresh rhubarb crisp

  • Step 1
    Preheat the oven to 350 degrees. If the rhubard is very thick, peel it first to remove some of the outer skin.
  • Step 2
    Place sliced rhubarb in a 6x10 inch baking dish. Sprinkle witht the cinnnamon and salt.
  • Step 3
    In a bowl, combine the flour and the sugar. Cut in the butter until crumbly. Add almonds or walnuts. Sprinkle the crumbly mixture over the rhubarb.
  • Step 4
    Bake for about 35 minutes or until golden brown and rhubarb is soft and cooked. Let cool slightly.
  • Step 5
    Serve with whipped cream or vanilla ice cream, if desired (and of course it is desired!)
