This is a great way to enjoy blueberries, serve warm with a scoop of vanilla ice cream and enjoy!!


I always double the topping ingredients, If you decide to do this add about 10 minutes of baking time to ensure the middle is done.
Frozen blueberries may be used.

Ingredients

  • 4 c
    fresh blueberries
  • 3 Tbsp
    white sugar
  • 1/3 c
    orange juice
  • 1/4 c
    tapioca
  • 2/3 c
    all purpose flour
  • 1/4 tsp
    baking powder
  • 1 pinch
    salt
  • 1/2 c
    butter, softened
  • 1/2 c
    white sugar
  • 1 medium
    egg
  • 1/2 tsp
    vanilla extract

How to Make Fantastic Blueberry Cobbler

Step-by-Step

  1. preheat oven to 375 degrees F.
    In a 9 inch square baking dish, mix blueberries. 3 T of sugar, orange juice and tapioca,set aside and let sit for 10-15 minutes.
  2. In medium bowl, cream butter and 1/2 cup sugar until light and fluffy. beat in egg and vanilla extract,mix flour and baking powder together gradually add flour mixture & stir just until combined.
  3. pour blueberries in baking dish and drop batter by rounded Tablespoons over mixture. Try to cover as much filling as possible.
  4. Bake in preheated oven for 35-40 minutes or until topping is golden brown and filling is bubbling..
