fantastic blueberry cobbler

This is a great way to enjoy blueberries, serve warm with a scoop of vanilla ice cream and enjoy!! I always double the topping ingredients, If you decide to do this add about 10 minutes of baking time to ensure the middle is done. Frozen blueberries may be used.

Ingredients

  • 4 cups fresh blueberries
  • 3 tablespoons white sugar
  • 1/3 cup orange juice
  • 1/4 cup tapioca
  • 2/3 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1 medium egg
  • 1/2 teaspoon vanilla extract

How To Make fantastic blueberry cobbler

  • Step 1
    preheat oven to 375 degrees F. In a 9 inch square baking dish, mix blueberries. 3 T of sugar, orange juice and tapioca,set aside and let sit for 10-15 minutes.
  • Step 2
    In medium bowl, cream butter and 1/2 cup sugar until light and fluffy. beat in egg and vanilla extract,mix flour and baking powder together gradually add flour mixture & stir just until combined.
  • Step 3
    pour blueberries in baking dish and drop batter by rounded Tablespoons over mixture. Try to cover as much filling as possible.
  • Step 4
    Bake in preheated oven for 35-40 minutes or until topping is golden brown and filling is bubbling..
