Ingredients
- 1 pound ricotta cheese
- 2 packages cream cheese (8 oz each)
- 5 medium eggs, divided
- 3/4 cup white sugar, divided
- 2 teaspoons each - grated lemon zest and lemon juice
- 1 cup flour
- 1 tablespoon baking powder
- 1 cup butter, melted
- 1/4 cup milk
- 1 can pie filling (cherry or blueberry or other)
How To Make easy blintz bake

Step 1Preheat oven to 350 F. Grease a 9 x 13 pan.

Step 2In a medium bowl, beat together Ricotta cheese, cream cheese, 2 eggs, 1/4 cup sugar, lemon zest and lemon juice until smooth.

Step 3In a separate bowl, combine flour, baking powder and 1/2 cup sugar. Whisk in melted butter, 3 eggs and milk. Mix until smooth. Spread 1/3 batter in the bottom of baking pan. Spoon the cheese mixture evenly over top.

Step 4Spread the remaining batter over the cheese layer. Bake for 1-1/2 hours or until set. Cut into squares and serve with pie filling spooned over top.
