  • 1 lb
    ricotta cheese
  • 2 pkg
    cream cheese (8 oz each)
  • 5 medium
    eggs, divided
  • 3/4 c
    white sugar, divided
  • 2 tsp
    each - grated lemon zest and lemon juice
  • 1 c
    flour
  • 1 Tbsp
    baking powder
  • 1 c
    butter, melted
  • 1/4 c
    milk
  • 1 can(s)
    pie filling (cherry or blueberry or other)

How to Make Easy Blintz Bake

Step-by-Step

  1. Preheat oven to 350 F. Grease a 9 x 13 pan.
  2. In a medium bowl, beat together Ricotta cheese, cream cheese, 2 eggs, 1/4 cup sugar, lemon zest and lemon juice until smooth.
  3. In a separate bowl, combine flour, baking powder and 1/2 cup sugar. Whisk in melted butter, 3 eggs and milk. Mix until smooth. Spread 1/3 batter in the bottom of baking pan. Spoon the cheese mixture evenly over top.
  4. Spread the remaining batter over the cheese layer. Bake for 1-1/2 hours or until set. Cut into squares and serve with pie filling spooned over top.
