easy apple dumplings

My daughter gave me this recipe, and it's so easy to make and so yummy, I just had to share it.

Ingredients

  • 1/2 cup water
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 2 tablespoons softened butter, divided
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup light brown sugar, packed
  • 1/4 teaspoon cinnamon
  • 1 - refrigerated pie crust
  • 4 small granny smith apples, peeled and cored

How To Make easy apple dumplings

  • Step 1
    Heat oven to 375. Lightly spray a 8"-square baking pan w/ cooking spray. In small saucepan, combine water, white sugar, vanilla, 1 tbsp butter and nutmeg. Boil over high heat for 1 min, set aside.
  • Step 2
    In bowl, combine brown sugar, cinnamon and 1 tbsp butter, mix well. Unroll pastry and cut into quarters.
  • Step 3
    Stuff each apple cavity w/ brown sugar mix. Place each apple on a quarter of pastry. Fold pastry up, around apple. Pinch ends to seal. Place apples, seam-side down into pan. Pour sugar sauce over apples. Bake 45 mins or until golden. Serve warm, drizzled w/ sugar sauce.
