My daughter gave me this recipe, and it's so easy to make and so yummy, I just had to share it.

Ingredients
- 1/2 cup water
- 1/4 cup sugar
- 1 teaspoon vanilla
- 2 tablespoons softened butter, divided
- 1/8 teaspoon ground nutmeg
- 1/4 cup light brown sugar, packed
- 1/4 teaspoon cinnamon
- 1 - refrigerated pie crust
- 4 small granny smith apples, peeled and cored
How To Make easy apple dumplings

Step 1Heat oven to 375. Lightly spray a 8"-square baking pan w/ cooking spray. In small saucepan, combine water, white sugar, vanilla, 1 tbsp butter and nutmeg. Boil over high heat for 1 min, set aside.

Step 2In bowl, combine brown sugar, cinnamon and 1 tbsp butter, mix well. Unroll pastry and cut into quarters.

Step 3Stuff each apple cavity w/ brown sugar mix. Place each apple on a quarter of pastry. Fold pastry up, around apple. Pinch ends to seal. Place apples, seam-side down into pan. Pour sugar sauce over apples. Bake 45 mins or until golden. Serve warm, drizzled w/ sugar sauce.
