Found the recipe in the Costco book. I love quick desserts and low carbs too.

Ingredients

  • 1/2 c
    oats, quick cooking or raw whole oats
  • 6 c
    plain low-fat yogurt
  • 2 c
    fresh or frozen blueberries
  • 1 Tbsp
    honey or stevia( 4 tablespoon or stevia)
  • 1 tsp
    cinnamon
  • 6 sprig(s)
    fresh mint, washed and dried

How to Make Crunchy Blueberry and Yogurt Parfaits

Step-by-Step

  1. Toast the oats in dry skill over medium-high heat until golden brown.
    In each of 6 fluted glasses, place 1/3 cup of plain yogurt. Put some Stevia in the yogurt make sweet.
  2. Add 1 tablespoon of blueberries, 1 tablespoon of toasted oats and drizzle of honey or Stevia.
  3. Repeat until each glass is filled to the top. Top each glass with a sprinkle of cinnamon and sprig of mint.
  4. Serve immediately or refrigerate until ready to serve.
