Breakfast or dessert? Any day is crepes day if you want to surprise someone special, like mom, sis, or loved ones. This is a favorite of mine, and I top mine with whipped cream or powdered sugar, or both; even ice cream or sour cream. Sometimes I will even use a fruit-flavored yogurt. These are sooo good. Hope you'll take time to surprise someone special.

Fruity, fresh, fluffy, light, delicate, we could go on and on about these crepes. The texture of a thin pancake, the crepes are soft and tender. They're not too sweet, which makes them a nice balance to the sweet strawberry filling and powdered sugar. Perfect for a brunch, luncheon, special occasion dinner, breakfast, or dessert.

Ingredients

  • CREPES MIX
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 dash salt
  • 2 tablespoons granulated sugar
  • 2 cups milk
  • 2 large eggs
  • 5 tablespoons butter, divided
  • FILLING
  • 1 can Comstock strawberry pie filling or flavor of your choice (21 oz)
  • TOPPING OPTIONS
  • - powdered sugar
  • ice cream
  • whipped cream
  • yogurt

  • Combine flour, baking powder, a dash of salt, sugar, milk, eggs, and 2 Tbsp of melted butter.

    Combine flour, baking powder, a dash of salt, sugar, milk, eggs, and 2 Tbsp of melted butter.
  • Mix and refrigerate overnight.
    Step 2
    Mix and refrigerate overnight in the fridge (4 hours is the minimum chill time).
  • Add a small amount of the remaining butter to a 6

    To cook the crepes, add a small amount of the remaining butter to a 6" skillet. Melt the butter.
  • Pour 1/4 cup of mix into the heated skillet and cook until brown on one side.

    Pour 1/4 cup of the mix into the medium-high-heated skillet. Cook for about 1 to 1 1/2 minutes until golden brown on the bottom.
  • Flip and brown the second side.
    Step 5
    Flip and cook the other side another 1 to 1 1/2 minutes until golden brown.
  • Once cooked, place on a platter with waxed paper between each crepe.
    Step 6
    As they cook, place on a platter and separate with wax paper until ready to fill them. Keep warm.
  • Heat filling in the microwave for 2 minutes.
    Step 7
    To fill the crepes, heat your choice of pie filling in the microwave for 2 minutes.
  • Add 1 Tbsp of filling to the center of the crepe.

    Add about 1 Tbsp of the warm filling onto the crepe.
  • Roll in jellyroll style.
    Step 9
    Roll in jellyroll style. Place on the serving plate.
  • Add toppings.

    Top with sprinkled powdered sugar (dust well), whipped cream, or your choice of toppings.
