Ingredients

  • 3 cups cranberries, fresh
  • 1 package (8 oz) pkg dates, chopped
  • 1 teaspoon vanilla extract
  • 2 cups flour (all purpose)
  • 2 cups oatmeal
  • 1 1/2 cups brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup butter, melted
  • ORANGE GLAZE
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons orange juice

How To Make cranberry date bars

  • Step 1
    In a medium saucepan combine cranberries and dates. Cook, covered, over low heat for 10-15 minutes. Stir in vanilla. Set aside.
  • Step 2
    In a large mixing bowl stir together flour, oatmeal, brown sugar, baking soda, and salt. Stir in margarine or butter until well blended. Pat half of oatmeal mixture on the bottom of a 9x13x2 inch pan. Bake at 350 degrees for 8 minutes.
  • Step 3
    Carefully spread filling over baked oatmeal mixture. Sprinkle remaining oatmeal mixture on top. Pat gently. Bake for 20 to 22 minutes.
  • Step 4
    Cool on wire rack. In a mixing bowl, stir together the powdered sugar, vanilla, and orange juice to a drizzling consistency. Drizzle with the Orange Glaze: cut into bars. Makes 32 bars.
