I like to bake cookies as my great grandchildren love the little treats..I also like to make squares as they seem to like that better than a piece of cake,,I guess they have to sit at the table to eat the cake and with a cookie or square, they can take and run to play.
1Spiced Cranberries.....In medium saucepan bring 2 cups each of water and sugar to a boil add 4 cups fresh or frozen cranberries 2 and orange zest..boil and cook until skins burst about 8 minutes, reduce heat and simmer covered for 1 hour, remove from heat and let cool.
2Heat oven to 350F. coat a 9 x 13 pan with butter and lightly dust with flour In a bowl mix together the flour , baking powder, baking soda and cinnamon.
3In another bowl using an electric mixer beat the butter and granulated sugar until light and fluffy about 3 minutes, beat in the eggs then the buttermilk and orange zest, reduce the mixer to low and slowly add the flour mixture, slowly just until incorporated.
4Spread half the batter into the pan, dollop 1 cup cranberry sauce over the top and swirl it into the batter sprinkle with e coconut the spread the remaining batter the dollop with remaining sauce and sprinkle with the nuts.
5Bake for 45 to 50 minutes until cake is golden brown and pick inserted in center comes out clean. While cake cools whisk together the confection sugar and milk and drizzle over warm cake..cool and cut into squares.
