cranberry/brown rice crisp

This is what I do...create with ingredients found in my pantry... btw...quite delicious

Ingredients

  • 1 cup brown rice, cooked
  • 1 can cranberry sauce(14oz. can)whole berries
  • 1 tablespoon lemon juice
  • 2 teaspoons cinnamon, ground (divided)
  • 1 cup brown sugar (divided)
  • 1/4 tablespoon salt
  • 2 tablespoons butter, melted
  • 1 cup graham crackers, crushed

How To Make cranberry/brown rice crisp

  • Step 1
    first butter a shallow baking dish, in a large bowl combine the instant brown rice, can of cranberries, lemon juice, 1/2 cup of the brown sugar, half of the cinnamon & salt
  • Step 2
    pour into prepared dish, then in a seperate small bowl, combine the graham crushed crackers, rest of cinnamon, brown sugar and butter...mix well and top the dish
  • Step 3
    bake 350 for 20 mins. till golden brown... cool for at least 30 mins... serve with vanilla ice cream or whipped whip if desired
