Ingredients
- 2 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup vegetable shortening
- 3 large eggs
- 1 cup pineapple juice
- 2 cups coconut, flaked
- 20oz cans crushed pineapple, drained
- 1/2 cup shredded coconut
How To Make coconut-pineapple squares

Step 1Preheat oven to 350 degrees. Lightly grease a 9 X 13 inch baking pan. Combine the flour, baking powder, baking soda, and cinnamon.

Step 2In a large bowl, beat the shortening, eggs, and pineapple juice. Gradually blend in the dry ingredients.Fold in flaked coconut and pineapple.

Step 3Spread into prepared pan. Bake for 15 minutes. Sprinkle shredded coconut over the top and bake for 10-15 minutes longer, until coconut is lightly colored. Cool in pan before cutting.
