Ingredients

2 1/2 c
all purpose flour
2 tsp
baking powder
1 tsp
baking soda
1 tsp
cinnamon
1/2 c
vegetable shortening
3 large
eggs
1 c
pineapple juice
2 c
coconut, flaked
20oz can(s)
crushed pineapple, drained
1/2 c
shredded coconut

Step-By-Step

1Preheat oven to 350 degrees. Lightly grease a 9 X 13 inch baking pan. Combine the flour, baking powder, baking soda, and cinnamon.
2In a large bowl, beat the shortening, eggs, and pineapple juice. Gradually blend in the dry ingredients.Fold in flaked coconut and pineapple.
3Spread into prepared pan. Bake for 15 minutes. Sprinkle shredded coconut over the top and bake for 10-15 minutes longer, until coconut is lightly colored. Cool in pan before cutting.
