Ingredients

  • 2 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup vegetable shortening
  • 3 large eggs
  • 1 cup pineapple juice
  • 2 cups coconut, flaked
  • 20oz cans crushed pineapple, drained
  • 1/2 cup shredded coconut

How To Make coconut-pineapple squares

  • Step 1
    Preheat oven to 350 degrees. Lightly grease a 9 X 13 inch baking pan. Combine the flour, baking powder, baking soda, and cinnamon.
  • Step 2
    In a large bowl, beat the shortening, eggs, and pineapple juice. Gradually blend in the dry ingredients.Fold in flaked coconut and pineapple.
  • Step 3
    Spread into prepared pan. Bake for 15 minutes. Sprinkle shredded coconut over the top and bake for 10-15 minutes longer, until coconut is lightly colored. Cool in pan before cutting.
