Ingredients For coconut-blueberry bars

  • CRUST:
  • 1/2 c
    butter
  • 3/4 c
    finely crushed graham crackers
  • 1/2 c
    all purpose flour
  • 1/2 c
    flaked coconut
  • 1/2 c
    ground pecans
  • 1/4 c
    granulated sugar
  • FILLING:
  • 8 oz
    pkg. cream cheese, softened
  • 2/3 c
    granulated sugar
  • 4 lg
    eggs
  • 1 tsp
    brandy or milk
  • 1 tsp
    vanilla extract
  • TOPPING:
  • 2 c
    fresh blueberries

How To Make coconut-blueberry bars

    Preheat oven to 350^. Lightly grease a 13x9-inch baking pan; set aside. --- Crust: In a small saucepan heat butter over medium heat until the color of light brown sugar. Remove from heat; set aside. In a medium bowl stir together graham cracker crumbs and remaining crust ingredients. Stir in melted butter until combined. Press evenly on bottom of prepared pan. Bake 8-10 minutes or until lightly browned. --- Filling: In a large mixing bowl beat cream cheese and sugar on medium until combined. Add eggs, brandy and vanilla.Beat until combined. Pour over hot crust. Sprinkle on blueberries (or other fruit) Bake 18-20 minutes until center is set. Cool in pan. Cover and refrigerate. Cut into bars. Store covered in refrigerator.
