As a rule I usually don't cook anything in my microwave, but I will make these little gems just that way from now on. Oh my were these ever good! I had one lone Granny Smith apple that I wanted to do something with as it certainly wasn't enough for a pie. So, this is what I created. I will be making these often as we always have apples in the house. The ingredients can easily be adjusted to your individual needs. My measurements are very close to what I used. I didn't measure as I often don't. I hope you try them sometime, they were awesome with a scoop of ice cream.

  • I MADE JUST ONE STUFFED APPLE, DOUBLE OR TRIPLE INGREDIENTS TO YOUR NEEDS
  • 1 Tbsp
    each - chopped pecans, brown sugar, raisins or dried cranberries
  • 1/8 tsp
    ground cinnamon
  • 2 Tbsp
    maple syrup - divided
  • 1 Tbsp
    butter
  • 1 lg
    granny smith or any tart apple

    In a small bowl, mix pecans or could use walnuts, cinnamon, brown sugar and raisins. Core apple, making sure you widen the hole just a little for the filling to fit. Peel the apple 2/3 of the way from the top.

    Place in a small microwave oven safe casserole. If the apple doesn't want to sit up straight, trim the bottom to flatten. Stuff with brown sugar mixture. Drizzle with 1 tablespoon syrup. Cover and cook on high setting for 3 minutes, or until apple is tender. May take more or less time depending on the microwave. Mine took 3 minutes exactly. While apple is cooking, heat remaining syrup and butter until butter is melted.

    When apple is cooked, plate and drizzle with any remaining caramel type liquid from bottom of dish. Pour maple butter sauce over the apple. Serve warm with ice cream.
