This recipe is always a crowd pleasure. The tartness of the cranberries along with the sweet caramel sauce works out beautifully. Every time I bring these to a family meal or other function, numerous people ask for the recipe. You can make multiple batches and place in the freezer for future events. Especially around the holiday season when there is so much to do.

Ingredients

  • 2 cups fresh cranberries-rinsed and dried
  • 3 tablespoons sugar
  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 2 cups oats, regular
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 2 sticks butter (not margarine) melted
  • 5 ounces chopped dates
  • 3/4 cup pecans-chopped
  • 1/3 cup all purpose flour
  • 12 ounces jar of caramel sauce
  • ****PREHEAT OVEN TO 350 DEGREES****

How To Make caramel cranberry bars

  • Step 1
    Rinse , drain and pat dry fresh cranberries. Place in a small bowl. Sprinkle with 3 tablespoonfuls of granulated sugar. Sitr, coating the cranberries, and set aside.
  • Step 2
    In a large bowl, combine 2 cups of flour,1/2 teaspoonful of baking soda, 2 cups of oats, 1/2 cup of granulated sugar and 1/2 cup of light brown sugar. Pour the melted butter over the the oats mixture and mix until crumbly. scoop out 1 cup of this oat mixture and set aside to use as topping for later.
  • Step 3
    Spray a 13x9 inch baking pan with cooking spray. Press the remaining oat mixture into the bottom of the baking dish. Bake at 350* for 15 minutes. Remove from oven.
  • Step 4
    Sprinkle the dates evenly on top of crust. Next sprinkle on the chopped pecans and finally the sugar coated cranberries.
  • Step 5
    In another bowl, combine the 1/3 cup of flour with the caramel sauce. Stir really well until the sauce is smooth. Spoon the caramel mixture on top of the cranberries. Finally ,sprinkle the oat mixture that you set aside evenly over the caramel mixture. Bake at 350* for 20-25 minutes. Let cool completely. Cut into bars. I keep mine stored int he refrigerator.
