I LOVE a lot of Paula Deen's Recipes. It is a great way to use up all those apples that come with this time of year!

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup brown sugar, firmly packed
  • 2 sticks butter, softened
  • 2 packages cream cheese, room temperature
  • 1/2 cup plus 2 tbsp, sugar, divided
  • 2 - large eggs
  • 1 teaspoon vanilla extract
  • 3 - apples...peeled, cored and finely chopped
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • STREUSEL TOPPING
  • 1 cup brown sugar, firmly packed
  • 1 cup all purpose flour
  • 1/2 cup oats, quick cooking
  • 1 stick butter, softened
  • DRIZZLE WITH 1/2 CUP CARAMEL TOPPING (ANY ICE CREAM BRAND) OVER FINISHED BARS

How To Make caramel apple cheesecake bars

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a medium bowl, combine flour and brown sugar. Cut in butter until crumbly.
  • Step 3
    Line a 13x9x2 pan with foil and lightly spray with cooking spray. It helps to spray your hands as well to press the mixture evenly in the pan. Bake for 15 minutes or until lightly browned.
  • Step 4
    In a large bowl, beat cream cheese with 1/2 cup sugar until smooth.
  • Step 5
    Then add eggs, one at a time until combines. Add vanilla, stir to combine. Pour over warm crust.
  • Step 6
    In a small bowl, stir together chopped apples, 2 tbsp. sugar, cinnamon and nutmeg. Spoon over cream cheese layer.
  • Step 7
    In another medium bowl, combine all streusel ingredients. Sprinkle over apple layer.
  • Step 8
    Bake for 30 minutes. Let cook for 10 minutes and drizzle with caramel.
