  • 2 c
  • 1/2 c
    brown sugar
  • 2 stick
    butter, softened
  • 2 pkg
    cream cheese, room temperature
  • 1/2 c
    plus 2 tbs. sugar
  • 2
    large eggs
  • 1 tsp
  • 3
    granny smith apples(peeled, cored, and finely chopped)
  • 1/4 tsp
  • 1/2 tsp
  • 1/2 jar(s)
    caramel ice cream topping

  • 1 c
    brown sugar
  • 1 c
  • 1/2 c
    oatmeal, uncooked
  • 1 stick
    butter, room temperature

How to Make Caramel Apple Cheesecake Bars


  1. Heat oven to 350 degrees and line a 9x13 pan with aluminum foil.
  2. In a medium bowl, combine flour and brown sugar; cut in butter until crumbly. Press evenly into pan and bake for 15 min or until lightly browned.
  3. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time and stir in vanilla. Pour over crust.
  4. In a small bowl, stir together apple pieces, 2 Tbs. sugar, nutmeg, and cinnamon. Spoon evenly over cream cheese layer.
  5. Streusel topping: Combine all ingredients in a small bowl and stir until well mixed. Sprinkle evenly over apple mixture.
  6. Bake for 30 min or until filling is set. Drizzle with caramel topping and serve. (Can also be topped by a dollop of whipped cream or a scoop of vanilla ice cream.)
