I took a recipe class years ago and the instructor made this along with fish tacos. It's absolutely delicious and easy to make!

Ingredients

Add to Grocery List

  • 1 c
    raspberries, mashed with fork
  • 4 Tbsp
    sugar
  • 3-4 Tbsp
    crystallized ginger, minced
  • 16
    strawberries, diced fine
  • 2
    small firm mangoes, diced fine
  • 1 c
    fresh pineapple, diced fine
  • 1 tsp
    balsamic vinegar
  • ·
    vanilla ice cream or frozen yogurt

How to Make California Gingered Fruit Salsa

Step-by-Step

  1. Combine raspberries with the sugar and let stand 5 minutes.
  2. Stir in ginger, strawberries, mango, pineapple and vinegar.
  3. Spoon over ice cream or frozen yogurt.
