I found this recipe in my box and had to share it. A friend in high school's dad used to make this for us for breakfast all the time! It is best served warm! Try with ice cream for a fruity dessert! Peach buckle is my favorite! :-)

Ingredients
- 2 cups fruit such as peaches, strawberries, or blueberries
- 1 1/2 cups sugar
- 2 - eggs
- 1/2 cup shortening
- 1/2 cup milk
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
How To Make buckle

Step 1Mix fruit with 1/2 cup of sugar. Set aside.

Step 2Cream together remaining sugar, eggs, shortening, and milk.

Step 3In a separate bowl, sift together flour, baking powder, and salt.

Step 4Add to egg mixture gradually. Stir in fruit/sugar mix.

Step 5Bake in greased 9x13 pan at 350 for 30-35 minutes or until toothpick comes out clean.
