I found this recipe in my box and had to share it. A friend in high school's dad used to make this for us for breakfast all the time! It is best served warm! Try with ice cream for a fruity dessert! Peach buckle is my favorite! :-)

Ingredients

  • 2 cups fruit such as peaches, strawberries, or blueberries
  • 1 1/2 cups sugar
  • 2 - eggs
  • 1/2 cup shortening
  • 1/2 cup milk
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

How To Make buckle

  • Step 1
    Mix fruit with 1/2 cup of sugar. Set aside.
  • Step 2
    Cream together remaining sugar, eggs, shortening, and milk.
  • Step 3
    In a separate bowl, sift together flour, baking powder, and salt.
  • Step 4
    Add to egg mixture gradually. Stir in fruit/sugar mix.
  • Step 5
    Bake in greased 9x13 pan at 350 for 30-35 minutes or until toothpick comes out clean.
