A nice twist on an upside-down cake. Great for summertime gatherings.

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 4 cups blueberries
  • 1 package yellow cake mix
  • 4 teaspoons grated lemon peel, divided in half

How To Make blueberry upside-down cake

  • Step 1
    Melt butter in a 13x9x2" pan. Sprinkle sugar evenly over melted butter.
  • Step 2
    Mix blueberries with 2 teaspoons of lemon peel; sprinkle over sugar.
  • Step 3
    Prepare cake according to package directions; stirring in 2 teaspoons of lemon peel at the end of mixing.
  • Step 4
    Spread batter over berries. Bake at 375° for 30 minutes or until the cake is done. Let stand for 10 minutes; turn out on a platter.
