This is a recipe my mom brought home with her when she went to visit her aunt out in Texas several years ago. It's a great quick recipe that is perfect with some vanilla ice cream on top ;)

Ingredients

  • 1 teaspoon cinnamon
  • 1 cup flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 2 cups fresh blueberries
  • 1/2 cup milk
  • 3 tablespoons butter, melted
  • 1 teaspoon lemon juice
  • TOPPING:
  • 3/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 cup boiling water

How To Make blueberry pudding cake

  • Step 1
    Toss blueberries with cinnamon and lemon juice. Put in greased 8 inch square baking dish. In a bowl, combine flour, sugar and baking powder; stir in milk and butter. Spoon over berries. Combine sugar and cornstarch from the topping ingredients; sprinkle over batter. Slowly pour boiling water over all.

    Bake at 350* for 45-50 mins or till the cake tests done.
