blueberry lemon clafoutis

I made this for my parents return from Florida and they just loved it! I just love the flavors of blueberries and lemon together. It is one of my favorite combinations. This is an incredible dessert and very easy to make. It is also yummy with a little milk on top or even a dollop of cream. Ingredients

  • 1 1/2 pints blueberries, washed and drained
  • 4 medium eggs
  • 1 cup sugar
  • 1 cup milk
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons lemon zest
  • 3/4 cup all-purpose flour
  • - pinch of salt
  • - powdered sugar (for garnish)

How To Make blueberry lemon clafoutis

  • Step 1
    Preheat the oven to 350° and place the blueberries in the bottom of a small glass pan (8" x 10" for rectangular pans, 9" for round pans).
  • Step 2
    In a medium bowl add the eggs and whisk lightly. Next, add the sugar and mix until the mixture becomes pale yellow. Add the milk and whisk together, followed by the lemon juice and lemon zest. Finally, add the flour and pinch of salt and whisk until completely combined.
  • Step 3
    Pour the mixture over the berries. Place in the center of the oven rack and bake about 45 minutes, or until the center has puffed up and bounces back when lightly pressed. Allow the clafoutis to cool for about 5-7 minutes & slice. Dust with powdered sugar, garnish with blueberries & lemon zest.
