I love blueberries and had a lot in the freezer one year. I wanted to make something different with them. This is the result.

Ingredients

  • 1 cup fresh blueberries
  • 1 cup water
  • 1/2 cup sugar
  • 1/4 teaspoon almond extract
  • 1 stick butter
  • 1 cup sugar
  • 3/4 cup self rising flour
  • 3/4 cup milk
  • 1/4 teaspoon vanilla
  • 8 ounces cream cheese
  • 1 cup confectioners' sugar
  • 3 tablespoons milk

How To Make blueberry cream cobbler

  • Step 1
    Place blueberries, sugar, water, and almond extract in a saucepan. Bring to a full boil, reduce heat and simmer 10 minutes, stirring occasionally. Cool.
  • Step 2
    Preheat oven to 350. Cut up butter and place in a 8x8 square pan. Place pan in oven until butter is melted. In a medium mixing bowl, combine sugar,flour,milk and vanilla. Whisk until it's all combined.
  • Step 3
    In a seperate bowl, combine cream cheese, confec. sugar and milk. Beat with an electric hand mixer until combined. This will be a little thick.
  • Step 4
    When the butter is melted, remove from oven and add flour batter. DO NOT STIR. Spoon blueberry mixture over batter, again DO NOT STIR. Dot cream cheese mixture over blueberry mixture. DO NOT STIR. Bake for 30-45 minutes. The top will be a light brown and the sides will be bubbly.
