  • 2 cups rice flour
  • 11/2 cups cornmeal
  • 11/2 teaspoons sodium bicarbonate
  • 2 tablespoons soft brown sugar
  • 9 ounces fresh bluberrys
  • 1 - dessert apple, cored, peeled an grated
  • 1/2 cup yogurt, plain
  • 2 tablespoons lemon juice
  • 1 tablespoon sunflower oil
  • 2/3 cup apple juice, unsweetened

How To Make blueberry corn muffins

  • Step 1
    preheat oven 400 degrees f. sift the rice flour, cornmeal, an sodium bicarbonate into a bowl. add the sugar, blueberrys, an apple, an mix well.
  • Step 2
    mix the yogurt, lemon juice, oil, an apple juice in a jug. pour into the bowl an stir in to make a soft batter, you may need a little extra apple juice. it should easily spoon into muffin tins you should have enough to make 10 muffins.
  • Step 3
    bake in oven 15 min or until golden. cool an serve
