  • 2 c
    rice flour
  • 11/2 c
  • 11/2 tsp
    sodium bicarbonate
  • 2 Tbsp
    soft brown sugar
  • 9 oz
    fresh bluberrys
  • 1
    dessert apple, cored, peeled an grated
  • 1/2 c
    yogurt, plain
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    sunflower oil
  • 2/3 c
    apple juice, unsweetened

How to Make blueberry corn muffins


  1. preheat oven 400 degrees f. sift the rice flour, cornmeal, an sodium bicarbonate into a bowl. add the sugar, blueberrys, an apple, an mix well.
  2. mix the yogurt, lemon juice, oil, an apple juice in a jug. pour into the bowl an stir in to make a soft batter, you may need a little extra apple juice. it should easily spoon into muffin tins you should have enough to make 10 muffins.
  3. bake in oven 15 min or until golden. cool an serve
