this is another great tasting cobbler my dad can make i make it myself really well i had 2 great teachers my parents

Ingredients

  • 16 ounces blueberries
  • 1/2 - lemon (using the rind and juice)
  • 3/4 teaspoon peeled, grated ginger
  • 1/2 cup sugar, divided
  • 1/4 teaspoon salt, divided
  • 3/4 cup all purpose flour, divided
  • 1/4 teaspoon baking powder
  • 2 tablespoons chilled butter
  • 3 ounces chilled cream cheese (reduced fat is fine)
  • 1/3 cup milk (use buttermilk if you have it)
  • 2 teaspoons turbinado sugar (brown sugar is fine if its all you have

How To Make blueberry cobbler

  • Step 1
    preheat oven to 375.
  • Step 2
    coat baking dishes with cooking spray.
  • Step 3
    grate 1/2 teaspoon of the lemon rind and set aside.
  • Step 4
    combine blueberries, lemon juice and ginger in a medium bowl.
  • Step 5
    add 1/4 cup sugar, 1/8 teaspoon salt and 1 tablespoon flour.
  • Step 6
    toss to combine. add the blueberries to your coated dishes. use a 9 inch square dish or a combination of smaller dishes (ramekins work well).
  • Step 7
    combine the remaining sugar, flour, salt and baking powder in a food processor. pulse until combined.
  • Step 8
    add the butter, lemon rind and cream cheese to the food processor. pulse until the mixture looks like coarse meal.
  • Step 9
    add the milk, and pulse until blended.
  • Step 10
    spoon the mixture over the berries.
  • Step 11
    bake for 30 minutes if using small ramekins, 45 minutes if using larger dish. serve with vanilla ice cream.
