Ingredients
- 16 ounces blueberries
- 1/2 - lemon (using the rind and juice)
- 3/4 teaspoon peeled, grated ginger
- 1/2 cup sugar, divided
- 1/4 teaspoon salt, divided
- 3/4 cup all purpose flour, divided
- 1/4 teaspoon baking powder
- 2 tablespoons chilled butter
- 3 ounces chilled cream cheese (reduced fat is fine)
- 1/3 cup milk (use buttermilk if you have it)
- 2 teaspoons turbinado sugar (brown sugar is fine if its all you have
How To Make blueberry cobbler

Step 1preheat oven to 375.

Step 2coat baking dishes with cooking spray.

Step 3grate 1/2 teaspoon of the lemon rind and set aside.

Step 4combine blueberries, lemon juice and ginger in a medium bowl.

Step 5add 1/4 cup sugar, 1/8 teaspoon salt and 1 tablespoon flour.

Step 6toss to combine. add the blueberries to your coated dishes. use a 9 inch square dish or a combination of smaller dishes (ramekins work well).

Step 7combine the remaining sugar, flour, salt and baking powder in a food processor. pulse until combined.

Step 8add the butter, lemon rind and cream cheese to the food processor. pulse until the mixture looks like coarse meal.

Step 9add the milk, and pulse until blended.

Step 10spoon the mixture over the berries.

Step 11bake for 30 minutes if using small ramekins, 45 minutes if using larger dish. serve with vanilla ice cream.
