I love cobblers! This one is easy to put together and a great way to use blueberries when they are in season and plentiful.

Ingredients For blueberry bottom cobbler

2 cfresh or frozen blueberries, thawed and drained

2 Tbspfresh lemon juice

3 Tbspshortening

1 3/4 cgranulated sugar, divided

1 call-purpose flour

1 tspbaking powder

1/4 tspsalt

1/2 cmilk

1 Tbspcorn starch

1/4 tspsalt

1 cboiling water

How To Make blueberry bottom cobbler

1Place the blueberries in the bottom of a greased 9-inch square baking dish; sprinkle with the lemon juice and set aside.

2Cream the shortening; gradually add 3/4 cup sugar, beating well at medium speed of an electric mixer.

3Combine the flour, baking powder, and 1/4 teaspoon salt; stir well.

4Add to the creamed shortening mixture alternately with the milk, beginning and ending with the flour mixture. Stir after each addition; spread the mixture over the blueberries.

5Combine 1 cup sugar, corn starch, and 1/4 teaspoon salt; stir well and sprinkle over the batter.

6Pour the boiling water over the cobbler. Do not stir.

7Bake at 375 degrees F for 40 to 50 minutes or until golden brown. Serve warm with ice cream.
