I love cobblers! This one is easy to put together and a great way to use blueberries when they are in season and plentiful.

Ingredients

  • 2 cups fresh or frozen blueberries, thawed and drained
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons shortening
  • 1 3/4 cups granulated sugar, divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
  • 1 cup boiling water
  • vanilla ice cream

How To Make blueberry bottom cobbler

  • Step 1
    Place the blueberries in the bottom of a greased 9-inch square baking dish; sprinkle with the lemon juice and set aside.
  • Step 2
    Cream the shortening; gradually add 3/4 cup sugar, beating well at medium speed of an electric mixer.
  • Step 3
    Combine the flour, baking powder, and 1/4 teaspoon salt; stir well.
  • Step 4
    Add to the creamed shortening mixture alternately with the milk, beginning and ending with the flour mixture. Stir after each addition; spread the mixture over the blueberries.
  • Step 5
    Combine 1 cup sugar, corn starch, and 1/4 teaspoon salt; stir well and sprinkle over the batter.
  • Step 6
    Pour the boiling water over the cobbler. Do not stir.
  • Step 7
    Bake at 375 degrees F for 40 to 50 minutes or until golden brown. Serve warm with ice cream.
