Ingredients
- 2 cups fresh or frozen blueberries, thawed and drained
- 2 tablespoons fresh lemon juice
- 3 tablespoons shortening
- 1 3/4 cups granulated sugar, divided
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 tablespoon corn starch
- 1/4 teaspoon salt
- 1 cup boiling water
- vanilla ice cream
How To Make blueberry bottom cobbler

Step 1Place the blueberries in the bottom of a greased 9-inch square baking dish; sprinkle with the lemon juice and set aside.

Step 2Cream the shortening; gradually add 3/4 cup sugar, beating well at medium speed of an electric mixer.

Step 3Combine the flour, baking powder, and 1/4 teaspoon salt; stir well.

Step 4Add to the creamed shortening mixture alternately with the milk, beginning and ending with the flour mixture. Stir after each addition; spread the mixture over the blueberries.

Step 5Combine 1 cup sugar, corn starch, and 1/4 teaspoon salt; stir well and sprinkle over the batter.

Step 6Pour the boiling water over the cobbler. Do not stir.

Step 7Bake at 375 degrees F for 40 to 50 minutes or until golden brown. Serve warm with ice cream.
