  • 3 tablespoons butter, room temperature
  • 1/2 cup sugar
  • 1 large egg
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 tablespoon cinnamon, ground
  • 1 pinch nutmeg
  • 2 tablespoons vinegar
  • 1/3 cup cranberry juice
  • 1/4 cup blackberry jam, seedless
  • 1-1/4 cup blackberries (fresh or frozed, thawed)

  • Step 1
    Preheat oven to 325 and lightly grease one 8X8 pan.
  • Step 2
    Beat butter and sugar together until fluffy... add egg and mix well.
  • Step 3
    Combine flour, salt, soda, cinnamon, and nutmeg in separate bowl.
  • Step 4
    Add the flour mixture to the sugar mixture, then stir in vinegar and juice.
  • Step 5
    Fold in blackberry jam and berries.
  • Step 6
    Pour batter into pan and bake at 325 for 35-40 minutes.
