Ingredients

  • 2 tablespoons cornstarch
  • 1 1/2 cups sugar
  • 1 tablespoon lemon juice
  • 4 cups blackberries
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, very cold, cut into ¼
  • - vanilla ice cream

How To Make blackberry cobbler

  • Step 1
    In a large bowl, stir together the cornstarch an 1/4 cup cold water until cornstarch is completely dissolved.
  • Step 2
    Add 1 cup sugar, lemon juice and blackberries, and combine the mixture gently but thoroughly.
  • Step 3
    Transfer to an 8-inch cast-iron skillet.
  • Step 4
    In a bowl, combine well the flour, remaining sugar, baking powder and salt.
  • Step 5
    Blend in the butter until the mixture resembles coarse meal.
  • Step 6
    Add 1/4 cup boiling water and stir the mixture until it just forms a dough.
  • Step 7
    Bring the blackberry mixture to a boil on top of the stove, stirring.
  • Step 8
    Drop spoonfuls of the dough carefully onto the boiling mixture, and bake the cobbler on a foil lined baking sheet in the middle of a preheated 400 degree oven for 20-25 minutes or until the topping is golden.
  • Step 9
    Serve warm with vanilla ice cream.
