Crockpot Recipe.This recipe was given to me by a friend in Pa. who is diabetic.
I have made it many times for my sister and her family. It is very good.

Slow Cooker Crock Pot

Ingredients

  • CRUST

  • 1 c
    flour
  • six Tbsp
    sugar
  • 3 Tbsp
    sugar substitute
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/4 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 2 large
    eggs, beaten
  • 2 Tbsp
    milk
  • 2 Tbsp
    vegetable oil
  • FILLING

  • 2 c
    blueberries, fresh or frozen
  • 2 c
    blackberries, fresh or frozen
  • 3/4 c
    water
  • 1 tsp
    grated orange peel
  • six Tbsp
    sugar
  • 3 Tbsp
    sugar substitute

How to Make Black and Blue Cobbler.....DIABETIC FRIENDLY

Step-by-Step

  1. crust:
    Combine flour, six T sugar,sugar substitute, baking powder, salt, cinnamon, and nutmeg.
    Combine eggs, milk, and oil. Stir into dry ingredients until well moistened.
    Spread the batter evenly over the bottom of a greased 5 quart crock pot.
  2. In saucepan, combine berries, water, orange peel, six T sugar,and sugar substitute.
    Bring o a boil. Remove from hea and pour over batter.
  3. Cook on high for 2 to 2 and a half hours, or until a toothpick inserted into batter comes out clean.
    Turn off crosk pot.
    Uncover and let stand for 30 minutes before serving.
    Spoon from crockpot and serve with non fat whipped topping or ice cream if desired.
  4. Nutritional values:
    calories: one hundred seventy
    total fat: 3 grams
    carbs: 33 grams
    fiber: 2 grams
    sugars: 23 grams
