This is the easiest and best lemon curd I’ve ever made. We use it in pies or on top of ice cream or pound cake.

Ingredients
- 4 - lemmons1
- 2 cups sugar
- 1/2 cup lemon juice
- pinch salt
How To Make best lemon curd ever

Step 1Peel the zest from the lemmons,I use a potatoe peeler. Put into a blender with the sugar process into a Crumble

Step 2Add salt, and eggs one at a time. Blend till the mix is light yellow and fluffy. Pour into a pan.

Step 3Cook over low to med low heat till thick. Strain into a bowl cover and chill.
