This is the easiest and best lemon curd I’ve ever made. We use it in pies or on top of ice cream or pound cake.

Ingredients

  • 4 - lemmons1
  • 2 cups sugar
  • 1/2 cup lemon juice
  • pinch salt

How To Make best lemon curd ever

  • Step 1
    Peel the zest from the lemmons,I use a potatoe peeler. Put into a blender with the sugar process into a Crumble
  • Step 2
    Add salt, and eggs one at a time. Blend till the mix is light yellow and fluffy. Pour into a pan.
  • Step 3
    Cook over low to med low heat till thick. Strain into a bowl cover and chill.
