I saw this recipe years ago in a magazine (sure wish I could recall which one) and loved it from day one. For variation you can use frozen blueberries and peach combination. If you do use 12 oz. frozen bag of each and increase the flour to 4 Tablespoons and cinnamon to 1 teaspoon.

Ingredients

  • 1/4 c
    sugar
  • 3 Tbsp
    flour
  • 2
bags (12 oz. each) frozen mixed berries, thawed
  • 32
    low fat vanilla wafers, crushed
  • 3/4 c
    low fat granola (no raisins)
  • 2 Tbsp
    wheat germ (optional but good)
  • 3 Tbsp
    packed brown sugar
  • 2 Tbsp
    melted butter
  • 3/4 tsp
    cinnamon, ground

How to Make Berry Crisp

Step-by-Step

  1. Pre heat oven to 350
  2. Stir together flour and sugar. Add in the undrained berries and stir. Pour into an 8 inch square pan. (you may want to give the pan a light spray of Pam first, but not necessary)
  3. Make a topping by mixing the crushed vanilla wafers with the remaining ingredients and sprinkle over the berries
  4. Bake for 20-25 minutes until bubbly.
(this is so good over vanilla ice cream!)
