Banana Lumpia with coconut ice cream

12 egg roll wrappers
6 bananas, peeled and halved
1 cup brown sugar
2 eggs, beaten
cinnalmon ,crushed macadamia nuts,chopped lycees, dried cranberries
vegetable oil for frying
coconut ice cream


1Brush 1 wrapper with egg wash. Put a half banana inside wrapper with 1 Tbsp. brown sugar and any optional ingredients as desired. Roll, folding in ends to seal banana. Repeat with remaining wrappers and filling.
2In a wok or heavy pot, heat the oil to 375. Deep fry lumpia til golden, about 30 to 40 seconds. Drain on paper towels. Cut crosswise and serve with coconut ice cream.
