The past weekend I had a few friends over for an impromptu dinner. For dessert I planned to shock and delight them with banana fritters.I fried up some overripe bananas after our main, dusted them with cinnamon and confectioner's sugar and drizzled dark chocolate over-Amazing 6 forks digging into a platter bursting with fried bananas..It was such magical fun.

How to Make Banana Fritters

Step-by-Step

  1. Create batter by cutting butter into flour then adding the fennel, egg, milk and sugar. You're aiming for a pourable/drop-able consistency. Let rest for one hour.
  2. Once the dough has rested, gently mix in the baking powder. Dip your sliced banana in the batter and then drop them into your medium-hot frying oil. They are done when they reach a golden brown.
  3. drain on paper towel, drizzle with cinnamon and confectioner's sugar, serve immediately with a bowl of vanilla ice cream.
