The past weekend I had a few friends over for an impromptu dinner.For dessert I planned to shock and delight them with banana fritters.I fried up some overripe bananas after our main,dusted them with cinnamon and confectioner's sugar and drizzled dark chocolate over-Amazing 6 forks digging into a platter bursting with fried bananas..It was such magical fun. Ingredients

  • 1 1/2 cups all purpose flour
  • 1/3 cup sugar
  • 1 large egg (well beaten)
  • 2 teaspoons fennel seeds
  • 1 1/2 tablespoons butter, room temperature
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 3 large overripe bananas(sliced thickly)
  • - ground cinnamon and confectioners sugar
  • 1 cup melted chocolate buttons
  • - canola oil for deep frying

How To Make banana fritters

  • Step 1
    Create batter by cutting butter into flour then adding the fennel, egg, milk and sugar. You're aiming for a pourable/drop-able consistency. Let rest for one hour.
  • Step 2
    Once the dough has rested, gently mix in the baking powder. Dip your sliced banana in the batter and then drop them into your medium-hot frying oil. They are done when they reach a golden brown.
  • Step 3
    drain on paper towel, drizzle with cinnamon and confectioner's sugar, serve immediately with a bowl of vanilla ice cream.
