The past weekend I had a few friends over for an impromptu dinner.For dessert I planned to shock and delight them with banana fritters.I fried up some overripe bananas after our main,dusted them with cinnamon and confectioner's sugar and drizzled dark chocolate over-Amazing 6 forks digging into a platter bursting with fried bananas..It was such magical fun. Ingredients
- 1 1/2 cups all purpose flour
- 1/3 cup sugar
- 1 large egg (well beaten)
- 2 teaspoons fennel seeds
- 1 1/2 tablespoons butter, room temperature
- 1 teaspoon baking powder
- 1/2 cup milk
- 3 large overripe bananas(sliced thickly)
- - ground cinnamon and confectioners sugar
- 1 cup melted chocolate buttons
- - canola oil for deep frying
How To Make banana fritters

Step 1Create batter by cutting butter into flour then adding the fennel, egg, milk and sugar. You're aiming for a pourable/drop-able consistency. Let rest for one hour.

Step 2Once the dough has rested, gently mix in the baking powder. Dip your sliced banana in the batter and then drop them into your medium-hot frying oil. They are done when they reach a golden brown.

Step 3drain on paper towel, drizzle with cinnamon and confectioner's sugar, serve immediately with a bowl of vanilla ice cream.
